Our XO sauce is made from the spent grain mash of our Rye Bonji.
XO Sauce is a savory sauce that originated in Hong Kong, China traditionally made from dried shellfish and pork. It is an aromatic condiment packed with many umami-inducing glutamates.
In an effort to move towards zero waste, we've repurposed the fermented grains from our Bonji-making process. These flavorful grains form the base to our sauce and are cooked for hours with soybeans, smoke, chilies, garlic, and ginger. The result provides just as much umami as the "original" and happens to be vegan.
